Preparation
With the various fermentation kits, you can make popular and well-known ferments such as pickles, sauerkraut and kimchi yourself. In most cases, all you need for preparation is
water and vegetables of your choice. Depending on the desired flavour and temperature, it is possible to enjoy the first ferments after just 7 days.
First cut the vegetables into equal-sized pieces. Then you can ferment them in a brine or in their own juice. You also have the option of combining different types of vegetables in one container.
Function
The vegetables are pressed down using the glass weight to cover them completely with liquid. The fermentation top is then placed on top to protect the fermentation from oxygen.
Kombucha
In addition to the fermentation of vegetables, the production of kombucha is also very popular.
Depending on the temperature and desired flavour, you can "brew" your own kombucha in just 5-10 days. To do this, dissolve the cane sugar in the hot tea and add it to the fermentation vessel together with a little water. The tea should cool down a little. Then add the tea fungus and starter liquid. Finally, cover the whole thing with a tea towel, place it in a warm place and wait. By waiting longer, you will get a more acidic and intense result. It is possible to use the tea mushroom and approx. 10-20% of the kombucha directly for a new batch or to keep it in the fridge for a later experiment.
Water kefir
One set contains organic kefir crystals with millions of tiny microorganisms to ferment sugar into water kefir. The crystals grow and multiply with each batch. Therefore, if used correctly, a water kefir set is a one-off purchase to make your own probiotic lemonade for a lifetime. To make classic water kefir, you need water, sugar and dried fruit, such as plums, . figs or sultanas, are required.
