The why is quickly explained. Raw food makes me clear, energised and healthy. I feel satiated but not full. I have variety and diversity. I can get everyone excited about it because raw food is more than just cucumber slices and carrot sticks. And I can let off steam much more in the raw kitchen than with cooked food because the range is huge. Every type of vegetable has numerous sub-varieties, such as tomatoes, and that's exactly what I love so much about raw food. I'm also not dependent on cooking times, baking times and standing times. Nothing sticks and nothing burns. I don't need pots and pans and the kitchen always smells nice and fresh. I love raw food :-)

I eat a raw vegan diet because at 77 I am in incredible health. I take no prescription medication and my vitality and energy make me feel decades younger. Raw food nourishes my body and supports my digestion. Raw food provides all the important enzymes and all the nutrients that only food in its natural state can give us. I drink freshly squeezed juice every day, eat lots of salad and fruit and I use my food dehydrator for gourmet cooking with crackers, biscuits and breads. I also love cheesy raw food desserts. I can truly say that a raw food diet slows down the ageing process.

Raw vegan food is the diet that is best able to meet human nutritional needs with less effort. This makes the individual free of fear and able to act. I actually came to raw food through taste! Since I went sugar-free for a year at the age of 16, I have increasingly changed my diet in favour of lots of vegetables, fruit and salad. For me, vegan raw food is the most natural, highest quality, richest in vital substances, lightest, most energetic, most peaceful, most colourful and most flavourful food of all. The feeling of boundless vitality and creative power, optimum concentration and joie de vivre only fully materialised for me when the causes of imbalance, such as health-threatening lifestyle habits have been eliminated and, in turn, all the prerequisites for holistic health have been created. Nutrition is an important factor, but not everything. Raw food offers many times more enzymes and vitamins than industrially processed and cooked food. In addition, dishes prepared raw offer an incomparably broad spectrum of colours, flavour nuances and creative possibilities. Fresh fruit and vegetables are also said to have health benefits. Preparing dishes is also easier than cooking. When baking, for example, just a few minutes can be enough for bread to fail. However, there are no such problems with raw food dehydration.

If I hadn't happened to go on a four-week holiday in California with a raw foodist and live a 100% raw diet, I would probably never have found out (because I wouldn't have believed it) what changes the switch to raw food has caused in my body. Since then I have 100% more energy, my head is more alert, the Denken is clearer, illnesses are virtually non-existent, ailments such as a stuffy nose in the early morning are gone, breathing during sport is easier and much more. However, the change not only affects the body and mind, but also the soul to the same extent, as these three are inextricably linked and mutually dependent. In this way, the more conscious use of FOOD (instead of food and fillers) is also transferred to other areas of life. My life has become more conscious, more balanced, more peaceful. To my surprise, my whole life has changed in a very positive way, for which I am very grateful.

Like every woman my age, I was confronted daily with new diets that supposedly make you healthier, better and more "animal-loving". After living vegan for over two years and not achieving the desired results in the long term, I gradually began to feel my way towards the raw food concept. Today I know that this is the ideal diet for me! I work in the management of an international, listed company, have a twelve-hour working day and have to stay fit and healthy to keep it up. With this raw food diet, I can do this without any problems. I also no longer need to spend a lot of time at the cooker and shopping is quicker and cheaper. However, I don't go 100 per cent without cooked food, but I make sure that I eat at least 80 per cent fresh, vegan ingredients, i.e. mainly raw fruit and vegetables. The remaining 20 per cent are steamed vegetables, gluten-free cereal products and, of course, my beloved tofu dishes from time to time. :-) The nice thing is: raw food never gets boring! Whether you want something quick and easy or are planning a multi-course gourmet meal for special occasions - there's plenty of variety!
