The only difference is the temperature. No food is heated above 45°C in the raw food kitchen. This preserves the pure flavour and valuable ingredients as much as possible. Raw food vs. Cooked food: What makes the difference?
If you want to protect the natural resources of our planet and eat in an environmentally conscious way, you should buy sustainably produced food. Those who also want to enjoy their food in its pure, unadulterated and living form prepare their meals in raw food quality. But what does raw food quality mean? The answer lies in the temperature.
Raw food offers an almost inexhaustible range of ingredients from which the most wonderful creations can be made. Anything goes - as long as it is not heated above 45°C. Raw foods such as seeds, nuts, kernels, vegetables and fruit naturally contain nutrients.
When food is heated above 45°C, important ingredients such as vitamins, minerals and other vital substances can be lost. The enzymes found in raw food, which can be destroyed by heat, are also particularly important.
In raw food, this means that as long as we stay below 45°C, we can mix, puree, grind and dehydrate our food to our heart's content - or simply enjoy it pure and unprocessed.
