Why eating raw food is good and vegan raw food is best:
Raw food - what is it and what is allowed
Heating raw food slightly before eating or preserving it by dehydrating is generally permitted as long as the food itself is not heated above 45 °C. In order to retain their original nutritional value, raw foods must be processed particularly gently,
which is often only possible by hand: dried fruits or seaweed are dried in the sun under controlled conditions. Cashew nuts, for example, have such a thick and hard shell that they are normally pre-treated with a lot of heat to make them easier to crack.
With really raw cashews, the pre-treatment is only carried out by drying at below 40°C, and the cracking itself is then done manually or mechanically without the addition of heat. Transport and storage also take place under particularly strictly controlled conditions.
This special treatment naturally makes raw food somewhat more expensive. However, the enzymes and vitamins remain intact and their structure remains intact. They are therefore much more valuable in terms of nutritional physiology and flavour.

Beware of denaturation - what to watch out for with raw food
Food with a "Really Raw" certificate is processed in such a way that the ingredients it contains are not denatured. During denaturation, biomolecules (e.g. proteins or DNA) in the food are changed in such a way that they can no longer fulfil their biological function.
The best known denaturation is that caused by heat (e.g. protein coagulation), as we obviously experience when boiling or frying a chicken egg. However, biomolecules can also be denatured by pressure, chemical reaction or irradiation, rendering them worthless from a nutritional point of view. Many harmful compounds such as the notorious trans fats and acrylamides are formed during heating.
What you should consider when buying raw food
Delicious pizza, savoury breads and mueslis, tempting chocolate confectionery and delicious hot dishes - all of these are also possible in raw food form. Particularly when a food consists of several ingredients and also contains oils, sweeteners and spices, for example, it is important to take a close look. There is still no legal regulation on what can be called raw food.
It is therefore not uncommon for alleged "raw food" products to contain heated ingredients such as roasted nuts, roasted coconut blossom sugar or refined oils - not to mention animal additives. The "Really Raw" seal of quality gives consumers the assurance of unadulterated and regularly inspected vegan raw food.
