Raw cedar kernels

Harvesting cedar kernels or cedar nuts from the cones of the Swiss stone pine (Pinus cembra asp. sibirica) is no easy task: After picking, the kernels are sorted and the shells are removed and the last remnants are sieved out. The peeled kernels are then gently dried and finally checked and sorted by hand for quality.
But cedar kernels are not only among the "kernel elite" because of their low yield and the time-consuming harvesting process - they are also true bundles of vitality.

Cedar kernels contain around 60% high-quality oils and lots of vegetable protein with 19 different amino acids. They also have a high phosphatide content, which plays an important role in growth phases.

Are cedar kernels different from pine nuts?
Different and often confused: Cedar kernel and pine nut. Cedar kernels are harvested from cones - from the cones of the cedar tree - just like their fellow pine nuts. However, their flavour cannot be compared with that of pine nuts. Cedar kernels are less well-known and less widely used as an ingredient due to the time-consuming harvesting process and low yields. Pine nuts have a rather elongated shape, whereas cedar kernels are roundish and squat.
What makes cedar kernels so valuable as an ingredient?
With their natural content of B vitamins and vitamin E, their high-quality oils and 19 different amino acids as well as their phosphatide content, cedar kernels can add nutritional value to your meals and dishes and you have a very healthy snack with these bundles of vitality.
How can I use cedar kernels?
Cedar kernels are becoming increasingly popular and are a delicious, aromatic alternative to pine kernels - precisely because of their intense and resinous flavour. You can experience the full flavour when you nibble them on their own. Cedar kernels are also an excellent ingredient. In salads, desserts and dishes, the seeds are an excellent addition and a pesto with cedar seeds and fresh basil is much more aromatic and intense in flavour than the traditional version. Just try it and be amazed!
How does the kernel come out of the cone?
The cedar kernels from Keimling Naturkost are harvested traditionally and in the wild. In late autumn, when the cedar cones open naturally as they ripen, the collectors set off on their long journey. After the strenuous harvest over several weeks, the "pickers" return and the processing begins. The kernels that have already been removed from the cones are sorted by hand and separated from the shell. This process is done by hand. A sieve is only used for the last bits of shell. They are then gently dried to preserve the raw food quality and the full spectrum of valuable ingredients in these flavoured kernels.

Ich habe früher viel Pinienkerne verwendet, habe ich nie wieder gekauft, seit ich diese Zedernkerne kenne. Besonders mag ich sie auf frischem Feldsalat zusammen mit geriebenem Ei, Balsamico und Olivenöl.
