Unsere Macadamia aus Südafrika: Knackig und nachhaltig
Our natural macadamias come from the garden province of Kwazulu Natal, one of South Africa's most renowned growing regions. This region, located around 1,800 kilometres north-east of Cape Town and around 150 kilometres south of Durban, offers ideal conditions for growing macadamias due to its proximity to the Indian Ocean and its warm ocean currents.
With around 9,000 macadamia trees and short transport routes, the freshness of the nuts is guaranteed. A special feature of this region is that the trees thrive without additional irrigation, as the climate provides sufficient rainfall. This near-natural cultivation guarantees the high quality of the nuts while conserving natural resources.
As soon as the nuts have reached the optimum degree of ripeness, they are gently cut from the trees and processed on the same day. Shelling takes place directly after harvesting and the macadamia nuts are immediately transferred to special drying chambers, where they are dried at a maximum temperature of 35 °C and a relative humidity of 35% over a period of five days. This slow and gentle drying method is crucial for preserving the nuts' valuable nutrients while ensuring a long shelf life. Mass-produced goods, on the other hand, are dried at high temperatures within a day - with a high loss of nutrients.
