How do sour cherries differ from sweet cherries?

The biggest difference is revealed by the name: sour cherries are more acidic than sweet cherries. And so, especially in the summer months, the sweet variety is - unsurprisingly - preferred to its sour "sister" as a fresh fruit. Only a few people like sour cherries fresh.
