Raw vegetable soup recipes

Raw food recipe: Pumpkin soup
Ingredients:
- 500 g Hokkaido pumpkin
- 60 g cashew nuts
- 500 ml water
- 1 tsp curry powder
- 1-2 tsp salt
- 1 clove of garlic
- 1 tbsp coconut oil
- ½ bunch of parsley
Preparation:
Place all the ingredients except the coconut oil and parsley in a high-speed blender and blend on the highest setting for approx. 2-3 minutes.
Then add the coconut oil and parsley. Blend both at medium speed. Small pieces of parsley should still be recognisable.

Raw courgette cream soup
Ingredients
2 courgettes
1 celery stalk
2 tbsp almond puree
1 ½ sea salt
pepper
onion
2 cups water
linseed oil
sunflower seeds
black sesame paste
fresh herbs
Preparation
1. Peel the courgettes and cut them into large pieces.
2. place the courgettes in the blender jug of your Vitamix together with the salt, celery, almond puree and pepper.
3. then add the onion and water. Blend with the Vitamix at a low speed at first and then slowly increase the speed. A raw vegetable soup at up to 45° C is prepared in 6.5 minutes.
4. then switch the Vitamix back to a lower speed and slowly add the linseed oil.
5. Serve your creamy soup with fresh parsley and give your dish a slightly tangy, nutty flavour with black sesame butter and sunflower seeds.

Raw sweet potato soup
Ingredients
325g sweet potato
250ml fresh carrot and beetroot juice or water
20g onion
1 garlic clove
2 tbsp cedar nut butter
20g ginger
30g dried mango
Chilli to taste
courgette for decoration
Preparation
1. put all the ingredients except the onion and courgette into the blender and blend. At the end, add the onion and chop with the pulse button until it is slightly chopped.
2. slice a few courgette strips with a slicer or peeler.
3. garnish the soup with courgette strips, cedar seeds and cedar puree. Done!
