100 ml orange juice
2 tbsp oil
1 tsp mustard
salt + pepper
2 oranges
Preparation:
Mix all the ingredients for the vegetable balls in a blender until you have a coarse, chunky mixture. If necessary, mix in more oat flakes. Roll into small balls with wet hands and bake in a preheated fan oven at 180 °C for about 15-18 minutes.
For the dressing, mix all the ingredients (except the orange segments) with a whisk, peel and segment the oranges and add to the dressing.
Then cut the beetroot into wafer-thin slices and arrange in a circle on a flat plate. Then wash the rocket and place a handful on each of the beetroot slices.
Finally, spread the vegetable balls and orange dressing on the carpaccio with rocket and serve with hemp seeds.

5 slices Keimling dried tomatoes
1 red pepper
½ courgette, peeled
¼ garlic clove
¼ tsp salt
2 Keimling Date Deglet Nour, pitted
1 pinch of chilli powder
1 tbsp almond puree
2 tbsp olive oil
Preparation:
Wash the peppers, remove the stalk and cut into large pieces.
Then place the peppers, peeled courgettes and the remaining ingredients in a high-speed blender and blend for approx. 1 min. on the highest setting until creamy.
Spread over the salad
