The high natural content of the plant pigment beta-carotene gives the pitaya its intense pink colour. The fibre-rich powder is obtained from the whole red dragon fruit. Its fruity, slightly acidic flavour is more intense than that of dragon fruit with white flesh, without being overpowering.
