Celery stalks are one of the hidden Champions of the vegetable kitchen: for the medical medium Anthony Williams, freshly squeezed celery juice is not a much-hyped trend, but "a gift from heaven" to naturally do something good for body and soul.

Celery - the all-round vitamin and nutrient package
Like all vegetables, celery is naturally very healthy: the umbellifer is one of the vegetables with the fewest calories and is also full of healthy ingredients: celery is very high in fibre and contains vitamins A, C, K, D and, rather unusually, B1, B2 and B6, as well as vitamin E. However, many natural minerals such as potassium, calcium, sodium, magnesium, folic acid, phosphorus and iron also promote good blood flow, support digestion and have a positive effect on skin problems when fresh celery juice is consumed regularly. The coumarins it contains have an anti-inflammatory, anti-spasmodic and calming effect. This power vegetable is therefore a real all-rounder in healthy (raw) cuisine and for daily well-being. The essential oils it contains have an antibacterial and antiviral effect; the flavonoids have an antioxidant effect. In short, celery is a powerful all-rounder for supporting health and wellbeing.
However, this knowledge is not new: celery juice has been used for centuries in traditional Chinese medicine and Ayurveda to treat high blood pressure, digestive problems and signs of ageing. Research has even shown, based on findings in Switzerland, that celery seeds were transported as early as 4,000 BC.
Best eaten fresh!
Not all celeriac is the same! Only celery is used for the green power booster. According to Anthony William, drink the fresh celery juice in the morning immediately after getting up on an empty stomach and wait another 15 to 20 minutes before having breakfast. If you want to drink larger quantities in pure form, you should start with small quantities, up to a maximum of one litre per day, so as not to flood the body unnecessarily with the high concentration of vitamins and minerals that it cannot process in such a short time.
Better cold-pressed or from the blender?
Anthony William recommends preparing the celery as a juice instead of a smoothie. This is the only way to absorb more vital substances. In particular, slow juicers with a low number of revolutions promise a higher juice yield and better juice quality compared to centrifugal devices, as significantly less oxygen is whirled in. Alternatively, celery juice can also be prepared in a high-performance blender, although this involves more effort than cold pressing in a juicer. The amount of juice in the blender is also lower and the pomace is significantly moister than when processed using an effective juicer.
Pure or in a healthy flavour combination?
For many people, celery juice tastes very unconventional, especially at first. The juice tastes slightly salty and bitter. The leaves in particular contain a lot of bitter substances. According to Anthony Williams' recommendation, the juice is best enjoyed on its own - this requires perseverance and a little creativity: If you want to get used to the flavour first, you should dose the green leaves carefully and start with smaller amounts. Or mix the juice with other foods. Good flavours include ginger, lemon, cucumber, pineapple, apple, mint and basil. Once you have become accustomed to the flavour, you can gradually increase the quantity and thus reduce the amount of other juices added - depending on your individual taste.
Simple tips for starting the celery juice cure
- If possible, buy organically grown celery, because according to Greenpeace, celery is one of the foods most heavily contaminated with pesticides.
- Celery is available as a seasonal crop from May to October in Germany. Out of season, it often comes from southern Europe, so

- If the celery has been juiced in a slow juicer, it will keep for up to 24 hours if stored in a dark place and refrigerated.
- If the juice tastes too bitter, juice the celery either without or with only some of the leaves. The bitter substances are in the leaves.
- It is best to enjoy the freshly squeezed juice in the morning on an empty stomach.
