My culinary journey into the world of Medical Medium©/Anthony William

In her book, Alexandra Skirde presents culinary creations for a "Medical Medium (Anthony William)" diet. She told us how she came to this conclusion and why a diet according to Anthony William makes sense to her.

I have been working with vegan raw food for over 10 years, constantly creating new recipes and enjoying the many new flavour experiences.
The combination of dates with nuts and hints of poppy seeds and vanilla - or chocolate with sour cherries - or Christmas flavours with aniseed and cinnamon are probably familiar to many people who are interested in raw vegan food.

But I have now caught the Medical Medium© Anthony William fever and have set out on a journey to discover new flavours again. The special challenge here is to completely avoid nuts, fat and salt this time. Is that not possible? Yes - it can - and how.
Energy balls based on delicious dried fruit - e.g. sour cherries soaked in filtered water for a few minutes, paired with caramelised sweet Medjool dates and a hint of vanilla make for a sweet-sour-exotic combination that melts in the mouth. The ingredients (without the sour cherry water) are simply whisked into a dough in the food processor and formed into balls. Heavenly. And so simple - keep it simple, so to speak.
The savoury dishes are also unsurpassed in terms of culinary delights. For example, courgette spaghetti with spinach and mushroom pesto. Simply mix spinach with mushrooms, garlic and lemon in the food processor to make a pesto and mix with the courgette spaghetti. Delicious and very easy to digest, as the nutrients can be absorbed in no time at all. In this way, we support our vital bodily functions and enjoy the very best of flavours.
Everything is possible in this way - from dips and dressings including ketchup to Asian vegetables, burgers, spaghetti Bolognese, fruity banana crêpes and cool drinks. Even local dishes such as creamed spinach with celeriac mash can be prepared raw and Anthony-style.
For many dishes, all you need is a sharp knife and a board. Nevertheless, it is an advantage to have a blender or personal blender, a food processor and a dehydrator at home. It also makes sense to buy a spiraliser. Of course, you can buy these appliances as you go along. They certainly give me great pleasure, as they allow me to enjoy the great variety of raw food.
Now the question arises: WHY reduce your fat consumption a little? Anthony provides a good and plausible explanation: isolated fats in particular are processed excessively quickly by the body, then immediately appear in the blood and thicken it, instantly stopping the body's self-cleansing process.
I eat nuts myself - as well as olives and avocados. However, I don't eat them every day and when I do, I incorporate these foods into my meal plan as late in the day as possible. According to Anthony, the liver can either detox or process fat. So I give it time to cleanse during the day and am happy when it also takes on fat processing later in the day.
Many people fast regularly. My tip: fast in a different way - e.g. with Anthony's 3-6-9 cure (you can find detailed instructions in his books, which can be ordered at Keimling ) or simply give up salt and fat of all kinds for a fortnight - and instead conquer wonderful new worlds of flavour.
I was so impressed by the topic that "Keep it Simple" (available from Keimling) was created in line with a Medical Medium©-compliant diet: I have served 144 recipes completely without salt and fats of any kind.
This new world of flavours will now also flow into ALGE. ALGE stands for "Alle Lieben Gesundes Essen" (Everyone loves healthy food) and is an organic vegan restaurant concept. The ALGE is currently being reorganised so that it will offer great dishes based on the Medical Medium© diet in levels 4, 5 and 5 Plus. For guests who want to integrate some fat into their diet, there will also be acceptable options such as cashew aioli or guacamole.

When creating the recipes for "Keep it Simple", I had wonderful help from Bernd Bissinger (Health Coach according to the Medical Medium© principles www.berndbissinger.com). He knows his way around the world of Anthony and is a true professional. He scrutinised every recipe to ensure that it complied with the Medical Medium© principles. I was therefore able to immerse myself in the Medical Medium© world, guided by one of the best in his field, and I am delighted to be able to convey this to the outside world.

RAW Falafel:

Chopped ingredients:
- 150 g carrots - roughly chopped
- 1 Medjool date - deseeded - roughly chopped
- 1 bunch coriander (approx. 15 g) - roughly chopped
- 10 fresh mint leaves
Preparation:
Chop the ingredients in the food processor and place in a bowl.
Liquid ingredients:
- 200 g carrots - roughly chopped
- 2 Medjool dates - pitted - roughly chopped
- 1 vine tomato - roughly chopped
- 1 lemon - freshly squeezed
- 1 tbsp cumin seeds
- 1 garlic clove - peeled
- Chilli to taste
- 100 ml filtered water
Preparation:
Blend all the ingredients in a high-speed blender to a fine paste and mix with the chopped ingredients in the bowl. Using 2 spoons, cut off approx. 25 falafel cams and dehydrate at below 42°C on the Paraflexx foil of the dehydrator for approx. 10 hours. Then remove the falafel from the foil and dehydrate upside down on the rack for approx. 2 hours until the desired consistency is reached.
