Lemon tart

Tarte mit hellem, cremigem Belag und hellbraunem, grobkörnigem Boden, dekoriert mit einzelnen grünen Kürbiskernen auf weißem Teller.

Ingredients:

Base - for approx. 15cm diameter

  • 100 g grated coconut
  • 5 - 6 pitted Medjool dates (approx. 100 g)
  • 1 tbsp melted coconut oil
  • Juice of one lemon

Lemon cream

  • 4 tbsp melted coconut oil
  • 3 tbsp almond puree
  • 2 tbsp melted cocoa butter
  • 2 tbsp date paste (soak dates in a cup of water and then blend to a paste)
  • juice + zest of one lemon

Preparation:

Mix all the ingredients for the base in the food processor to make the dough and spread it onto a tart tin lined with baking paper, pulling up the sides. Brush the tin with a little coconut oil beforehand so that the baking paper sticks well and the dough can be spread easily.
For the lemon cream, carefully melt the coconut oil and cocoa butter in a bain-marie and add the other ingredients. Mix everything with a spoon to form a creamy mixture. Pour the cream onto the tart base and decorate as you wish with lemon zest, flowers, nuts, etc...
The tart needs approx. 1 - 2 hours cooling time to set properly - and then nothing stands in the way of fresh, light treats.

Raw food wraps

Vier Wraps aus Wirsingblättern sind mit buntem Gemüse wie Rotkohl, Möhren und Paprika gefüllt. Ein grüner Kreis zeigt den Schriftzug Rohkost Rezept.

Ingredients:

For the wraps

  • 4-6 large savoy cabbage leaves
  • 4 handfuls of rocket
  • 1 carrot
  • ¼ sweet pepper
  • 1 small piece of red cabbage red cabbage
  • ½ cauliflower
  • 1 msp. turmeric powder with pepper

For the dressing

  • 6 tbsp hemp seeds, peeled from Keimling natural food
  • 80-100 ml water
  • ½ lemon (juice)
  • 2 tbsp agave syrup from Keimling health food
  • 1 tbsp yeast flakes
  • ½ tsp salt

Preparation:

Firstly, cut the stalk out of the savoy cabbage leaves. Then cut the carrot, pepper and red cabbage into thin strips. Then finely grate the cauliflower and mix with turmeric for the colour.
Now blend all the ingredients for the dressing with a high-speed blender until creamy and leave to infuse.
In the meantime, roll the wraps. To do this, place a handful of rocket, a few strips of carrot, pepper and red cabbage and a few spoonfuls of cauliflower rice in the centre of each savoy cabbage leaf. Then fold in the sides and roll up the long side.
Fill a small bowl with the dressing and dip the wrap in while eating.

Popeyes Power Juice

Ingredients:

  • 4 apples
  • 4 kiwis
  • ½ lemon
  • 1 handful of spinach
  • Wild herbs as desired (e.g. nettle, goutweed or chickweed)

Preparation:

Simply juice the ingredients one after the other.

Then stir 1 to 2 teaspoons of chia seeds into the juice as desired and leave to swell for approx. 2 minutes.
