Why does celery juice look so different throughout the year?
If you have been a celery juice drinker for a while, you may have wondered why celery juice changes its appearance over the course of the year, i.e. sometimes it is green, sometimes rather brownish, sometimes lighter and sometimes darker.
The reason for this is the celery itself. When we buy celery in the shop, we have no influence on how it is presented. Sometimes they are longer stalks with lots of leaves, sometimes the celery is heavily cut for a longer shelf life, sometimes the celery is light green and sometimes dark green.
If the inner stalks are slightly yellowish, the colour of the juice is more brownish; if the stalks are intensely green, the juice is naturally also greener.
Celery is also known as pale celery because it is often grown in a darker colour to protect it from light, which means that it is lighter in colour and not as dark green. The lighter green makes for a milder flavour, which is preferred by many people.
Celery juice also tastes milder because it contains fewer bitter substances. Dark green celery grown in the sun contains significantly more minerals and vital substances than its pale counterpart. As a logical conclusion, it is sufficient to drink a smaller amount of juice from this intensely green vegetable, which contains significantly more chlorophyll, in order to absorb the same vital substances.
If you have the option, you should favour organically grown celery stalks. But no matter in which form you get the celery stalks, you will feel the positive health effects on your own body after a short time.
