Recipes

Cauliflower pita, raw vegan (Boris Lauser)
Equipment
High-performance blender, dehydrator
Ingredients
160 g cauliflower
100 g cashew nuts(soaked for approx. 3-4 h, then rinsed)
4 g salt
½ tsp cumin, ground or crushed
⅓ tsp cardamom, ground
5 g nutritional yeast flakes
140 g water
30 g olive oil
10 g psyllium husks, ground
Garnish: black cumin or black sesame seeds
Preparation
1. Finely puree all the ingredients, except for the psyllium husks, in a high-speed blender.
2. add the psyllium husks and blend again at the highest speed. Wait briefly for the psyllium husks to swell.
3. then spread out evenly round pita breads on a drying film and sprinkle with black cumin or black sesame seeds. Makes 8-9 round pitas (approx. 10cm in diameter).
4 Dry in the dehydrator at 45 degrees for approx. 10 hours until the outside is slightly crispy and the inside is still a little soft. After about half the time, remove from the foil and finish drying directly on the rack. The pitas are very versatile.

Smokey paprika and lime dip with coriander
Equipment
Ingredients for one bowl
150 g raw cashew nuts, soaked in water for 2 hours
1 red pepper
1 onion
2 garlic cloves
1 chilli pepper
20 g sun-dried tomatoes
Juice of 1 lime
1 tsp lime zest
2 tbsp coconut blossom sugar(not raw, use agave syrup as an alternative)
2.5 tbsp nama tamari
1 tsp apple cider vinegar
1 tbsp raw olive oil
1 tsp chipotle powder
1 tbsp cumin
1 tbsp paprika powder, sweet
300 ml water
1 bunch coriander
Preparation
1. Blend all the ingredients in a high-speed blender until smooth.
2. then flavour with lime juice, coconut blossom sugar, chipotle powder, cumin and paprika powder. Add the coriander and mix in again briefly.
