

Oats - small grain, big impact: the health benefits of an underestimated superfood

Recipes

Raw cinnamon stars
Ingredients 'Cinnamon stars':
- 200 g dates
- 200 g hazelnuts
- 5-6 tbsp oat flakes
- 2 tbsp coconut oil
- 1 ½ tsp cinnamon
- ½ tsp vanilla
Ingredients 'Cashew Frosting':
- 150 g cashew nuts (soaked)
- 120-150 ml plant-based drink
- 2 tbsp agave syrup
- 2 tbsp coconut oil
- 1 tbsp lemon juice
Preparation
1. For the cinnamon stars, blend all the ingredients in a high-speed blender to a finely chunky mixture. If the mixture is still too sticky, mix in a little more rolled oats. Then chill for 30 minutes.
2. in the meantime, mix all the ingredients for the frosting into a creamy mixture and chill.
3. roll out the date mixture on baking paper to a thickness of about ½ cm and cut out stars. Then dip each one into the frosting, smooth with a spoon if necessary
and chill for another 15 minutes.

Christmas overnight oats
Ingredients
- 60 g rolled oats
- 30 g chia seeds
- 1 tsp sultanas
- 1 tbsp almond butter
- 1/2 tsp Christmas spice or cinnamon
- 1 tsp cocoa
- 200 ml almond or oat milk
- 2 mandarins
- 1 TLAgave syrup
As topping
- Nut butter (e.g. cedar nut butter)
- Vegan (raw) chocolate
- Finely chopped nuts (e.g. hazelnuts)
Preparation
Place the rolled oats in a jar with the ingredients and mix. Place the jar in the fridge either overnight or for 1-2 hours. Then pour the mixture into small glasses and decorate with toppings of your choice and your delicious breakfast for the family is ready. Incidentally, you could also serve these oats as a dessert. It's best to use more sweetener (agave syrup) and liquid chocolate to turn your overnight oats into a delicious dessert.
