Base ingredients:
80-100 g dates
80 g hazelnuts
50 g rolled oats
1 tbsp coconut oil
1 tbsp almond butter
1 pinch of salt
Ingredients 'Filling + Topping':
250 g cashew nuts (soaked)
170 ml plant-based drink or 170 ml water and 1 tbsp almond butter
4 tbsp agave syrup
3 tbsp coconut oil (liquid)
1 lemon (zest + juice)
3 peaches
Preparation
For the base, mix all the ingredients in a high-speed blender to a slightly chunky and sticky mixture. Then press into a mould lined with baking paper and chill briefly.
In the meantime, cut the peaches into thin slices. Spread 1/3 of the peach slices evenly over the base.
Then blend all the ingredients for the filling in a blender until creamy and pour onto the base. Place the remaining peach slices on top of the raw cake and place in the freezer for at least 4 hours.
Tip: Remove the raw cake from the freezer 15 minutes before cutting.

80 g raw almonds, soaked in water for 10 hours
150 g raw coconut flakes
500 ml water
3 raw dates
1 msp. orange peel, grated
½ tsp cinnamon
Preparation
Process all the ingredients, except the coconut flakes, in a high-speed blender. Leave the porridge to cool completely, then briefly mix the coconut flakes into the mixture and flavour with dates, orange zest and cinnamon. Under no circumstances should you process the grated coconut in the blender right from the start, as otherwise the whole mixture may tip over and no longer taste good.
