


Raw vanilla crescents
One of the most popular biscuits and now a classic in its raw Keimling a classic among natural foods: every year again!
Ingredients
300 g raw almonds, soaked in water for 10 hours and dried in a dehydrator for at least 8 hours
150 g raw shredded coconut
1 tsp vanilla powder
2 tbsp vegan sweetener or honey
10 tbsp raw coconut oil
3 tsp tiger nut flour or coconut flour for dusting
Process the almonds and coconut flakes separately into flour in a high-speed blender.
Process the flour with the vanilla powder and sweetener in a food processor fitted with the S-insert until smooth and flavour with the vanilla powder and sweetener.
Add the melted coconut oil and process again.
The easiest way to do this is to shape the dough into a long roll with a diameter of 2 cm. Then cut off about 1 cm for each croissant, roll it between your hands and bend it into the right shape. Place the crescents on a baking tray lined with baking paper. If the dough is too crumbly, work in a little more coconut oil and chill the dough for about half an hour. You can also add a little water and leave to cool.
As soon as all the croissants are ready on the baking paper, dust with tigernut flour or coconut flour. To do this, take a small, narrow-meshed sieve and pour some of the flour into it with a teaspoon. Now use the teaspoon to push the flour back and forth in the sieve and dust it over the vanilla crescents.
Leave the crescents to set in the fridge for at least an hour.

Vegan speculoos
Another Christmas classic in a delicious vegan version.
Ingredients:
180-200 g rolled oats from Keimling natural food
120 g almonds from Keimling health food
80 g applesauce
80 g agave syrup from Keimling health food
2 tbsp walnut purée from Keimling health food
1 tbsp coconut oil from Dr. Goerg via Keimling health food
2 tsp speculoos spice
1 tsp orange peel
Finely grind the rolled oats and almonds in a blender and heat the coconut oil until it is liquid.
Knead all the ingredients into a firm (not too sticky) dough. Then wrap in cling film and place in the fridge for 30 minutes.
Now roll out the dough on a floured work surface and cut out the desired biscuit shape.
Place on a baking tray lined with baking paper and bake at 180 degrees for 12-15 minutes.

Fruit bread
A moist bread with a variety of dried fruits and nuts - customised to your taste!
250 g dried fruit (green sultanas, sour cherries, apricots, dates, figs from Keimling Naturkost)
150 g nuts (walnuts, almonds, cashews from Naturkost) Keimling Naturkost)
2 tbsp almond butter from Keimling Naturkost
2 tbsp coconut oil from Dr. Goerg via Keimling health food
1 banana (mashed)
200 ml plant-based drink
1 orange (zest + juice)
2 tbsp lemon juice
2 tbsp coconut blossom sugar
150 g rolled oats (finely ground) from Keimling health food
½ tsp baking powder
Preheat the oven to 170 degrees fan.
Place the dried fruit in a bowl, before cutting the apricots, dates and figs into small pieces.
If desired, chop the nuts into small pieces and add to the bowl.
Now add all the remaining ingredients and mix well.
Then pour into a greased loaf tin, sprinkle with rolled oats and bake for around 45-50 minutes.
